Holiday Favorite: Orange Cookies
This recipe for holiday orange cookies has been a family
favorite at our house since My grandmother's day. My kids beg me to make
them every year, as do some friends of ours. Give them a try, you are sure
to enjoy them
Ingredients:
1 cup butter or margarine
1-1/2 cups sugar
1 cup buttermilk
3 eggs
2/3 cup freshly squeezed orange juice
4-1/2 teaspoons grated orange zest (peel)
(Grate the oranges first then juice them)
3-1/2 cups unbleached flour
1 teaspoon baking soda
1 teaspoon baking powder
Frosting
4-1/4 cups confectioners' sugar
2 teaspoons of finely graded orange zest (peel)
1/3 to 1/2 cup orange juice
Directions:
In a mixing bowl, cream shortening and sugar. Add the buttermilk, eggs,
orange juice and zest. Combine the dry ingredients; gradually add to the
creamed mixture. Drop by teaspoonfuls 2 in. apart onto ungreased baking
sheets. Bake at 375° for 10 minutes or until lightly browned.
For frosting, combine the confectioners' sugar,
orange zest and enough orange juice to achieve desired consistency. Spoon
mixture into a sandwich bag and cut of one small corner, then drizzle over
cooled cookies.
